Mac and cheese is one of my greatest loves so I decided to start a blog series reviewing Denver mac and cheese dishes from restaurants around town. I’m on a mission to spread the word about the best and worst mac and cheeses in the area. My quest is to find the best in town. Join me as I eat my way through Denver, one mac and cheese review at a time. Today, I’m reviewing Interstate’s mac and cheese appetizer. Enjoy!

Interstate Kitchen and Bar
When I decided to start this mac and cheese review series, I knew I wanted to go back to Interstate. I had had their mac and cheese a couple of times and it left a lasting impression. I’m so glad I went back because a few weeks after I went, they announced they were closing! Now, on the review. The flavor of this mac and cheese is excellent. The mix of cheeses and seasonings they use is spot on however, the consistency was a little grainy.
The presentation used to be so much better but the last time I went (when I reviewed it), the mac and cheese was served in a disposable ramekin. It was much less appealing than the previous ceramic dish they served it in, with melted, crispy cheese oozing over the edges. It also made it more difficult to eat since the paper ramekin would slide around every time I tried to take a bite. Plus, they got an extra point off for being less environmentally friendly. It’s always a bit upsetting when restaurants serve food in disposable dishes.
Mac and Cheese Appetizer
At a base price of $7, this dish is a great value. Even though it’s listed as a starter, it was plenty filling as an entree. Although, you could easily rack up a bigger bill with all the mix in options they offer. Veggie mix-ins are $1 each and proteins are $2 each. I always choose caramelized onions or bacon. I hate when restaurants offer raw onions as a topping or mix-in option when caramelized onions are so, so much better!
The topping on Interstate’s mac and cheese appetizer was breadcrumbs and scallions. Scallions make everything better, in my opinion! The breadcrumbs were nice but they were kind of dry and bland. Like, they forgot to put butter of top to get them yummy and crunchy.
Obligatory cheesy photo of me eating mac and cheese!
